
I am a sucker for a special and subsequently, I love it when items are in season because they are really cheap so I stock up on them. Blueberries are wonderful because they freeze beautifully and can be used the whole year round. Most recipes account for people using frozen Blueberries. The added bonus is that these are kind of healthy.

After moving to Cape Town – I had a good look at my pantry and realised I have some ingredients that are almost too old to use so before they got bad I wanted to use them. One of these ingredients was Wheat Bran. This is how this recipe came about. Enjoy ๐

Blueberry Health Muffins
Makes: 12
Prepartion & Cooking Time: 40 Minutes

Ingredients
1 1/2 cups of Wheat bran
1 cup boiling water
1 egg
1/2 Cup of oil
1 tsp almond essence (optional)
1 cup flour
1 tsp baking powder
1/2 tsp salt
1 cup blueberries (frozen or thawed)
Icing
Rind and juice of 1 lemon
1 cup icing sugar
Method
- Preheat oven to 180C
- Pour boiling water over wheat bran and mix in
- Mix in the oil, egg and almond essence to the bran mixture
- Add the flour, baking powder and salt to bran and mix well
- Fold in blueberries and spoon the mixture into a greased muffin tray (or lined with muffing cases)
- Bake for 15 minutes
- While baking mix the lemon rind and juice with the icing sugar
- Remove the muffins from the tray and let cool
- Drizzle with icing
