Grapefruit is a fruit that is synonymous with Winter. This ruby coloured citrus has the most beautiful colour and flavour and I love eating them as is – no sugar or any other condiments thrown in. When they are in season you have to eat grapefruits anyway you can. These Grapefruit Curd Tarts are a hit in Winter using these beautiful seasonal fruits.

If your grapefruit curd is a little thin – heat the curd up in a double boiler and add 1-2 sheets of gelatine (softened in water) to the warm curd. Pour the curd into the shells and then refrigerate till set.
