Apricots are an amazing and underrated gem of a fruit. These succulent and juicy golden fruits are the whole package. Their flesh is sweet and their kernel (inside the pip) houses a flavour of maraschino and almond. It comes as no surprise that apricot jam is a firm favourite – however, you have not lived until you have made or tried homemade apricot jam with these nuggets of almond flavoured goodness. My mom and grandmother make the best apricot jam – so good you want to steal a jar or too with every visit, sorry mom.
Let me share the secret on how to remove an apricot kernel. In order to get this almond flavored kernel out of the pip requires minimal effort. All you need to do is remove the pip from the fruit. Using a hammer gently hit the pip on the apex until it cracks / shatters, do not hit too hard as you don’t want to destroy the heaven inside.
Throw away the hard pieces and keep the soft kernel inside. In order to get the skin off the kernels easily place them in a bowl of boiling water for 5-10 minutes.
Gently remove them from the water (be careful you do not burn your fingers) and gently slide the skin off the kernel. That is all you need to do to get beautiful fresh apricot kernels.
