I love winter. I love the fashion (boots, jerseys, and coats), the cuddling and the comfort food. One of my favourite things to eat in winter is soup – it warms your soul and the flavour combinations are endless. This vegetable soup is so easy to make and allows us to still be healthy and get our 5 vegetables a day! This vegetable soup can be left to be a chunky soup but I really dislike chunky soup so I blend the soup up til it’s smooth and serve it with some spiced seeds to add some more flavour and crunch to the soup.
I also love this soup as if there are any more stray vegetables in the fridge/ cupboard you can add them to the soup – so nothing is wasted. This vegetable soup freezes really well – reheat the soup on the stove and stir well and serve hot.
1 Onion finely diced
2 Tablespoons of Olive Oil
2-3 Cloves of Garlic Crushed
2 Carrots diced
2 Sticks of Celery finely cut
1/2 Cabbage finely Diced
1/2 Bag of Spinach
1 Tin of Tomato
1 litre Vegetable Stock
- Saute the onion in olive oil for 2 minutes.
- Add the celery and carrot and saute for 3 minutes.
- Add the garlic and stir.
- Add the rest of the ingredients and place a lid on the pot. Let simmer for 20 minutes.
- Serve hot with fresh bread and some spiced seeds.
You can serve this soup as chunky (just omit the liquidizing step)
Feel free to add any other spare vegetables into the soup.
